Together, we’ve crafted something truly special: the Smile Farms Spaghetti Squash, available for a limited time at RUMBA Patchogue from September 17 through October 15, 2025.
The Dish: Flavor with Purpose
The entrée brings together the best of the season — crisp-skinned, grilled Arctic char, served over tender spaghetti squash grown by Smile Farms participants, tossed in pesto butter, and finished with a bright, savory romesco sauce.
It’s a dish that tastes like fall: silky, citrusy-herb notes from the pesto, the gentle sweetness of squash, and a roasted-pepper finish that invites another bite. But even more than flavor, it’s a plate that celebrates community, craft, and inclusion.
